ITs all about the veggies here! Just post some recipes for dishes not including meat. If it sounds really good it can include fish too, but try to have it completly meatless!

Vegetarian chili Very Happy this is a recipe I found on the internet, my mom makes a version of it MUCH better than I can, but I figure this is good enough to put in here. We put many, many kinds of beans in ours instead of leaving it so plain.

INGREDIENTS

* 1 tablespoon vegetable oil
* 1 cup chopped onions
* 3/4 cup chopped carrots
* 3 cloves garlic, minced
* 1 cup chopped green bell pepper
* 1 cup chopped red bell pepper
* 3/4 cup chopped celery
* 1 tablespoon chili powder
* 1 1/2 cups chopped fresh mushrooms
* 1 (28 ounce) can whole peeled tomatoes with liquid, chopped
* 1 (19 ounce) can kidney beans with liquid
* 1 (11 ounce) can whole kernel corn, undrained
* 1 tablespoon ground cumin
* 1 1/2 teaspoons dried oregano
* 1 1/2 teaspoons dried basil


DIRECTIONS

1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
2. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

stuffed mushrooms, anyone? found this on allrecipes.com and it's so good. i leave the almonds out though :]

NGREDIENTS

* 24 large fresh mushrooms
* 6 tablespoons butter or margarine
* 3/4 cup plain dry bread crumbs
* 1 envelope dry onion soup mix
* 1/2 cup sliced almonds
* 1/4 cup shredded Parmesan cheese

DIRECTIONS

1. Remove stems from mushrooms and finely chop; set caps aside. In a skillet, saute chopped mushrooms in butter until tender, about 6-8 minutes. Remove from the heat; stir in bread crumbs, soup mix and almonds. Stuff firmly into mushroom caps. Place in a greased 15-in. x 1-in. x 1-in. baking pan; sprinkle with cheese. Bake, uncovered, at 425 degrees F for 12-15 minutes or until tender.
